Let's look at a step by step example!

How do I create an area model when multiplying 3 digits by a 1 digit number?

Draw your rectangle.
Break apart your numbers using place value. (expanded form)
Multiply using each value and record your partial products in your model.
Add all of your partial products to get the total product!

Now let's look at multiplying 4 digits by 1 digit!
