Molds are microscopic fungi that live on plant or animal matter. Mold is a type of fungus that causes food spoilage. Sometimes, mold may have white or green fuzzy spots, especially when it's growing on bread. Mold may only appear on the surface, but it has roots underneath. Even if you take the top part of the mold off, its roots will still be in the rest of the food item. Given the proper conditions, mold will start to germinate and grow as early as 24 hours after encountering the moisture source. In 3 to 12 days, the mold spores will colonize. In 18-21 days, the mold can become visible.
