1 cup ham drippings

The Instructions
First step is to decide what kind of ham you are going to have if you use ham on the holidays. Ham is normally very salty and its gravy is closer to beef gravy its very savory and salty.

Choices for ham
Many people use honey glaze, brown sugar rub or pineapple on the outside of thier ham this can add a little sweetness to the Gravy. Some people use seasoning salt and or Paprika, be careful this doesnt make the gravy too salty you might need some extra milk. My personal favorite is to use Carribean or jerk spices on the ham with pineapple and have a slightly spicy gravy.

Steps
Just like the Mac and cheese we have to start with a roux which basically means we are going to make a thick and gritty mix with our flour before we mix in the milk to help it clump less.
Add the ham drippings and butter to a saucepan over medium heat and whisk until butter has melted.
Add in the flour and whisk for 2-3 minutes.
Pour in the milk and continue to whisk constantly for 2 minutes or until thick.
