But how did they survive?

When any form of tissue, under certain circumstances, avoid breaking down.
Can be filled in and hardened by sediment over time.

When sediment fills in or around a fossil.
Molds cover hard tissue, leaving an imprint.
Casts are molds that were filled in with extra sediment.
